posted in: Uncategorized | 0 IMG_2963[1]It’s a sunny but freezing morning in February and, with my lesson already planned for this evening, I thought I’d try my hand at a very popular Latin American dessert, arroz con leche (rice with milk), also a very popular British dessert (rice pudding), but, with the vegan members of my extended family in mind, a vegan version.  To veganize this traditional dessert, I used coconut milk instead of dairy and dark, dairy-free chocolate instead of milk chocolate.  The recipe is so simple.  Mix two cups of cooked white rice with 2 cups of simmering coconut milk mixed with two tablespoons of agave nectar, a capful of vanilla extract and a teaspoon or two of cinnamon. To make mine sweeter, I added two tablespoons of white sugar. Stir until thickened, pour into mason jars and sprinkle with grated chocolate. This dessert brings back memories of my first two trips to Mexico, trips for which we didn’t rent a car but took long bus rides here, there and everywhere.  As we boarded buses, vendors, often children, would approach us, selling small, plastic cups of gelatinas and arroz con leche, still reaching up to the open windows of the bus as it slowly pulled away. These treats, which we always bought, were our ‘brindis’, our toast to the journey ahead.  Arroz con leche was particularly special because my grandmother had often made it for me in the UK, making it a childhood staple.  In my experience, the Mexicans and the British get along famously. Could it be for their shared passion for football, their penchant for chocolate … and, yes, an intermittent craving for a good rice pudding? Whatever the case, it was strange but lovely to experience a hint of my English past as we passed cactae and mango trees dozing in the Mexican heat. We went to Mexico when my daughter Rebecca was two and, again, the gelatinas and el arroz con leche were a treat as we travelled from place to place, Rebecca, happily distracted with the chickens clucking up a storm beside her, ‘piyo’ being one of her first words.
